Summary
Apples variety "Granny Smith" picked at different harvest dates were stored under low-oxygen, controlled-atmosphere and regular storage conditions, and heat treated (37 deg C for 4 days). Levels of cuticle conjugated triene hydroperoxides were measured during storage. The influence of storage conditions and hydroperoxide levels on superficial scald were studied.
