Summary
2-Nonanone appeared to be an effective antifungal agent but it caused peel discoloration of apple slices. However, commercial processed apples are usually cored, peeled and sliced and thus the discoloured peel may not be an issue. Sensory evaluation and tissue texture of treated slices remain to be tested.
