Summary

GOLDEN DELICIOUS, STARKING AND GRANNY SMITH APPLES WERE STORED UNDER LABORATORY AND COMMERCIAL CONTROLLED ATMOSPHERE CONDITIONS. A MIXTURE OF 3% O2 AND 3% CO2 WAS THE BEST FOR GOLDEN DELICIOUS AND STARKING, WHILE 5% O2 AND 0% CO2 WERE THE BEST FOR GRANNY SMITH. CONTROLLED ATMOSPHERE CONSISTENTLY RESULTED IN BETTER FIRMNESS, ACID, GREEN GROUND COLOUR, TEXTURE AND TASTE. UNDER LABORATORY CONDITIONS STARKING AND GRANNY SMITH DEVELOPED MORE SCALD THAN THE FRUIT COMMERCIALLY STORED IN CONTROLLED ATMOSPHERE. ETHYLENE ABSORPTION DID NOT IMPROVE THESE CONDITIONS.
