Summary
Study on the Beurré d'Anjou, Williams, Red Bartlett pear varieties and the Royal Gala apple variety. Effect of atmosphere composition (O2 and CO2 in respective proportions of 2-0, 2-1, 2.5-1.5 and 1.5-0%) and storage time (130, 157 or 222 days) on weight loss, appearance, firmness, dry-matter content, acidity and texture. Controlled-atmosphere storage at 15 deg C makes it possible to maintain the specific sensorial properties of the variety.
