Summary
The author compares the use of very-low-oxygen atmospheres with the usual refrigeration method involving oxygen, industrial experience since 1987, European statistics and data cited in the literature. Optimal conditions for certain varieties of apples and pears are also given for the 1994-1995 period, as are successfully used conditions in general.
