Controlling of peel and flesh colour development of mango by perforation of modified atmosphere packages at different temperatures.

Summary

Gas permeability of most polymeric films for modified atmosphere (MA) packaging of mangoes was insufficient for proper colour development. This study was aimed at investigating the effect of degree of perforation of MA packaging on colour development of the peel and flesh of Nam Dok Mai mangoes in Thailand. Peel colour development was more sensitive to O2 stress than flesh colour development. The rate of colour development of both peel and flesh was linearly related to the logarithm of total pore area at all storage temperatures.
