Summary

Relationships between maturity and some physical properties of avocados stored at 6 deg C with absorption of generated ethylene were examined. Penetration pulp resistance and skin colour, which is directly related to the ethylene concentration in the atmosphere around the fruit, were particularly scrutinized.
