THREE CULTIVARS ARE CONSIDERED: BURBANK, NORCHIP AND KENNEBEC. DRY MATTER, SUCROSE, REDUCING SUGAR CONTENTS AND THE WEIGHT OF THE TUBERS MAKE IT POSSIBLE TO DETERMINE THE COLOUR OF FRESH POTATOES.
