Summary

Results are presented of a study on cryogenic freezing with preliminary thermal treatment (bleaching, pre-drying) on carrot, cauliflower and zucchini quality during -18 deg C storage. The efficiency of cryogenic freezing of vegetables after predrying is demonstrated. C.C.
