Mushrooms cut into thin slices are kept in an acid solution at 5 deg C for 24 hours with no changes, thus giving a finished product (i.e., mushrooms cooked in oil, seasoned with garlic and parsley) in a glass container identical to that obtained with freshly picked mushrooms.
