Summary

Compared with many other horticultural products, the mushroom (Agaricus bisporus) has a high susceptibility to bruising and a short storage life. Postharvest technologies aimed at maintaining the quality of mushrooms are based on cooling and cool storage, chemical washing, irradiation and modified atmosphere packaging. Preharvest cultural factors and minimization of damage have important influences on the postharvest quality of mushrooms. Current and future developments in improving storage life are primarily in biochemical and genetical techniques aimed at reducing or removing the activity of enzymes involved in deterioration.
