Summary

As a result of the development of electronic circuits which are capable of simulating the relationship which exists between temperature and the deterioration of foodstuffs, it is timely to consider the best functions of time and temperature to programme into modern integrators to correlate the effect of these parameters on foods. Integrators which are based on the reactions of enzymes or physical phenomena, are limited by the apparent activation energies which determine their response to temperature.
