Effects of different concentrations (2, 5, 7.5 and 10%) of sodium lactate-lactic acid buffer and of modified-atmosphere storage (90% CO2 and 10% O2) on the shelf life and organoleptic quality of poultry stored at 6 deg C. Meat treated with a buffer concentration of 10% can be stored for 17 days at 6 deg C.
