IN ORDER TO STUDY THE DEHYDRATION OF POTATO AND MAINLY DETERMINE THE INFLUENCE OF DIFFERENT FACTORS ON WEIGHT LOSS DURING FREEZING AND STORAGE, A TEST WIND TUNNEL WAS USED ; THE CONTROLLED FACTORS WERE AIR TEMPERATURE, AIR VELOCITY AND RH. RESULTS SHOW THAT HIGH VELOCITIES AND TEMPERATURES AS WELL AS LOW RH INCREASE THE MASS TRANSFER RATIO. COMMENTS AND CONCLUSIONS FOR DESIGN AND CONSTRUCTION OF FREEZING AND STORAGE ROOMS ARE GIVEN.
