STUDIES WERE MADE IN ORDER TO DETERMINE THE STORAGE LIFE OF FROZEN PORK SAUSAGES DEPENDING UPON COMPOSITION AND RAW MATERIAL PROPERTIES. THE CONFORMITY OF THE VARIATIONS OF PEROXIDE AND THIOBARBITURIC INDICES DURING THE STORAGE OF THE PRODUCT IS SHOWN. A RELATIONSHIP WAS OBTAINED WHICH ENABLED ONE, BASED UPON COMPOSITION AND RAW MATERIAL PROPERTIES, TO PREDICT THE STORAGE LIFE OF FROZEN SAUSAGES. R.R.
