DETERMINATIONS OF ENZYMES ACTIVITIES IN FRUITS AND VEGETABLES STORED AT DIFFERENT TEMPERATURES.

Summary

THE ACTIVITIES OF CATALASE (CAT), PEROXIDASE (POD) AND POLYPHENOLOXIDASE (PPO) ENZYMES WERE DETERMINED SPECTROPHOTOMETRICALLY IN CUCUMBERS, EGGPLANTS, PLUMS AND APRICOTS AT DIFFERENT TEMPERATURES. APRICOTS STORED AT 278 AND 273 K (5 AND 0C) WERE ANALYSED IN THE CASE OF BOTH SOUND AND INJURED FRUIT. SOUND APRICOTS SHOWED A HIGHER PPO AND POD ACTIVITY IN COMPARISON TO THOSE WITH INJURIES. PLUMS STORED AT 278, 275 AND 273 K (5, 2 AND 0C) SHOWED THE MOST RELEVANT LOWERING IN THE PPO ENZYMATIC ACTIVITY WITH DECREASING TEMPERATURES. THE ACTIVITY OF ALL ENZYMES, IN CUCUMBERS STORED AT 283, 278 AND 273 K (10, 5 AND 0C) WAS THE HIGHEST AT THE TEMPERATURE OF 278 K. EGGPLANTS STORED AT 283 AND 273 K SHOWED AN INCREASE IN PPO AND A DECREASEIN CAT ACTIVITY FOR FRUIT STORED AT LOWER TEMPERATURES AND NO APPRECIABLE CHANGE IN POD ACTIVITY. A SIMPLE RELATIONSHIP BETWEEN ENZYMATIC ACTIVITY AND TEMPERATURE WAS NOT DEFINABLE. E. F.
