AS A RESULT OF DECREASING DEMAND, MANUFACTURERS NOW PROPOSE NEW DOUBLE-FUNCTION COMBINED OVENS: EITHER MICROWAVES AND EXTRACTED AIR, OR MICROWAVES AND A GRILL. BETTER DATA SHOULD BE PROVIDED ON THE QUALITY AND SAFETY OF THESE OVENS. THEIR MAIN ADVANTAGE CONTINUES TO BE SPEED, PARTICULARLY IN THAWING. THIS IS MUCH APPRECIATED IN THE AGRO-FOOD INDUSTRY WHERE MICROWAVES HAVE FOUND NUMEROUS APPLICATIONS. J.L.
