Summary
The authors demonstrate in the article the value of training in the food industry for meeting the requirements of directive 93/43/CEE. They propose a group of courses and modules on food hygiene and comment on some of the most important aspects of training programmes, including teachers, pedagogical techniques, site and duration of the courses, and sanctioning of the results.
