Summary

In the seasons 2000-2001 and 2001-2002, pears cvs. 'Carola' and 'Concorde' were stored in a cold store at 0-0.5 °C. Flesh firmness, acidity, soluble solids and weight loss were determined. The measurements were conducted at harvest and after 90, 120, 150 and 180 days of cold storage. The same measurements were also taken after 7 days of additional storage at 15 °C. Storing pears in cold storage had a positive effect on fruit firmness. However, cold storage did not limit the reduction in acidity and great losses in fruit mass.
