THE PREMORTAL (ELECTRICAL STUNNING), LIKE THE POSTMORTAL AND COMBINED PREMORTAL AND POSTMORTAL ELECTRICAL TREATMENT OF RAPIDLY COOLED SIDES FROM MORE THAN 100 HEADS OF CATTLE OF DIFFERENT CATEGORIES AND CLASSES GENERALLY GAVE POSITIVE RESULTS WITH REGARD TO MEAT QUALITY (PH, CONSISTENCY, WATER BINDING CAPACITY). IN THE CASE OF THE COMBINED ELECTRICAL TREATMENT OF BULLS, AN INCREASE IN THE RATIO OF LOWER QUALITY DARK MEAT IS TO BE EXPECTED.
