Summary

EGGS WITH SIMILAR WEIGHT (60 TO 65 G) WERE PACKED IN FOUR TYPES OF PACKAGING AND STORED AT 5 AND 19 C. AFTER 2, 9 AND 16 DAYS, THE VOLUME OF AIR CELL, THE EXTENT OF ALBUMEN, WEIGHT LOSSES AND THE YOLK INDEX WERE DETERMINED. STORAGE CONDITIONS (TIME AND TEMPERATURE) AFFECT EGGS QUALITY INDICES. THE PACKAGING TYPE HARDLY AFFECTS THEM. THE VOLUME OF AIR CELL AND EGG WEIGHT, ON ONE HAND, ALBUMEN HEIGHT AND YOLK INDEX, ON THE OTHER HAND, CHANGE IN PARALLEL.
