TWO VARIETIES OF FIGS (FICUS CARICA) (SARIOP AND BLACK BURSA) WERE FROZEN AFTER 4 DIFFERENT PRETREATMENTS, AND VARIATIO NS IN QUALITY DURING STORAGE WERE ANALYSED. THE RESULTS OF PHYSICAL, CHEMICAL AND SENSORIAL ANALYSIS ARE DETAILED.
