Summary

THE INFLUENCE OF COLD STORAGE ON THE PRESERVATION OF THE QUALITY OF 23 FRUIT AND VEGETABLE SPECIES WAS DETERMINED BY MEANS OF 3 INDICATOR GROUPS. MORPHOLOGICAL CHANGES STUDIED UNDER AN ELECTRON MICROSCOPE SHOWED THAT COLD STORAGE DIMINISHED THE RATE OF FORMATION OF SOME COMPLEX SUBSTANCES WHICH ARE SPECIFIC TO PHYSIOLOGICAL DISEASES AND TO THE BROWNING OF TISSUES. LIKEWISE, ETHYLENE PRODUCTION DIMINISHED AND THE PRODUCT STORAGE LIFE BECAME LONGER.
