Summary

Comparison of biochemical indexes during storage of beef packed in a mixture O2-CO2 (80-20) at 5 deg C. The atmosphere composition influences breakage of myofibrils and makes it possible to stabilize lactate dehydrogensae activity. Modified-atmosphere-packed meats maintain biological activity even after 8 days storage.
