Effect of pallet stacking arrangement on fruit cooling rates within forced-air precoolers.

Summary

The rapid precooling of fruit prior to storage is essential to reduce product degradation due to respiration and moisture loss. The design of fruit precooling rooms is studied and particularly the best possible arrangements of the loads in the rooms (palletization). The arrangement in staggered rows seems to be the best one; the carton position on the pallets must permit the best air flow; air bypasses must also be eliminated as far as possible.
