Summary
Changes in the parameters of L colour and chromaticity of cooled (4-5 deg C, 90% relative humidity) or packed-under-controlled-atmosphere asparagus was studied during storage for 21 days. With white asparagus, modified atmosphere storage is more efficient than cooling, for maintaining colour. With green asparagus, both storage methods work, but modified atmosphere is better for a longer storage.
