Summary

The greatest increases in metabolic activity, phenol accumulation and peroxidase and phenylalanine-ammonia-lyase activities were detected in slices from freshly harvested roots, while phenol accumulation and metabolic activity were reduced in slices stored for 3 months. It is suggested that the postharvest storage period of carrot roots used in food processing might affect the nutritional value of the product.
