Effect of storage temperature on the keeping quality of some date cultivars.

Author(s) : SHAZLY S. M. el-

Summary

The dates were packed in polyethylene bags and stored at different temperatures (0, -5 and -10 °C). Fruit characteristics were measured on fresh basis following 3 and 6 months of storage. The results generally indicated that the fruit weight loss percentage markedly increased with the increase of storage temperature and period. Moreover, the soluble solids content (SSC), reducing and total sugars were significantly increased, while pH, non-reducing sugars and tannins were decreased with increasing storage temperature and with the progress of storage period.
