THE A. REPORTS THE RESULTS OBTAINED IN A STUDY OF THE EFFECT OF STORAGE TEMPERATURE AND TIME ON THE PROTEOLYSIS OF AXENIC RAT MUSCLE. FOUR TEMPERATURES ARE STUDIED: 275-285-295 AND 305 K (2-12-22 AND 32C) OVER 1-2-3-4-6 AND 8 WEEKS. THE INCREASE IN SOLUBLE NITROGEN IS RELATIVELY LOW. ON THE OTHER HAND, THE INCREASE IN NON-PROTEIN NITROGEN IS VERY IMPORTANT AND STRONGLY AFFECTED BY TEMPERATURE AS IT IS APPROXIMATELY TWICE HIGHER EVERY 10 K BETWEEN 275 AND 305K. AT A HIGH TEMPERATURE NON-PROTEIN NITROGEN QUICKLY AMOUNTS TO THE THREE QUARTERS OF SOLUBLE NITROGEN, THEN IS MAINTAINED AROUND THIS LEVEL.
