THE STUDY OF COOLING KINETICS AT VARIOUS LOCATIONS OF CARCASSES DIFFERING BY THEIR WEIGHT, STRUCTURE AND FATTENING CONDITION MADE IT POSSIBLE TO DETERMINE A COEFFICIENT S. WITH S, THE TEMPERATURE OF CARCASS AT A GIVEN LOCATION DURING ITS COOLING CAN BE PREDICTED FOR AIR TEMPERATURE AND SPEED IN COLD ROOMS. ALLOWING FOR S VALUES FOR THE CARCASSES USUALLY MARKETED, MOST CATTLE CARCASSES PRODUCED IN FRANCE WILL BE AFFECTED BY COLD SHORTENING UNDER THE COOLING CONDITIONS SPECIFIED BY REGULATIONS, WITHOUT EXCLUDING THE MICROBIAL HAZARD.
