Summary

The findings show that controlled atmosphere can be used to extend storage life of broccoli to four weeks. At storage end the inflorescences showed a very low weight loss, ranging from 1.9 to 2.7% as compared to 48.8% in the unpackaged and 12.2% in the partially packaged (plastic film) controls. The most effective concentration tested was 8% oxygen and 10% carbon dioxide: in this condition no rot was detected and flavour traits registered the best rating.
