Effects of initial modified atmosphere on the shelf-life and quality of iceberg lettuce-(sweet corn mixed) salad.

Summary

Iceberg head lettuce was trimmed, halved, stalk removed and then shredded into 8 mm strips. It was washed in chlorinated (100 ppm) cold water (-1 at 4 °C) and centrifuged. Shredded lettuce was then divided into 2 batches and packaged with a vacuum chamber system in 185 more or less 10 g bags by flushing CO2 and/or sodium sulfide. Bags were then stored. Analyses were performed during a two week period. In addition, the effects of calcium chloride on the texture and shelf-life were studied. Microbiological analysis, instron hardness value, colour, acidity and pH, total dry matter content and vitamin C content were evaluated during storage period. Sensory analyses were also performed.
