Summary
This paper explains the influence of chilling on microbiological growth, the importance of temperature control, the rules for appropriate positioning of delicate foods as well as the reason why just cooked food must be refrigerated within two hours following cooking. A seldom mentioned fact is the impossibility to eliminate totally the micro-organisms from the surfaces. Moreover, microbial growth on surfaces is faster in condensed water which inevitably appears when the fridge door cannot be tightly closed. Wrapping all food in the fridge is essential.
