Summary

The storage quality of Belgian endive heads has become one of the major criteria of product marketability. Following harvest, witloof chicory heads undergo various deteriorations: drying, turning red, turning green, bacterial diseases, etc. However, all these problems can be controlled by adapting the production, packaging, storage and distribution techniques. Some types of wrapping help limit these deteriorations, but their effectiveness remains dependent on the initial quality of the witloof chicory and the conditions in which it was grown.
