Summary
In this paper, data concerning the energy consumption of commercial kitchen ventilation in Europe/VDI, USA/ASHRAE and Japanese codes are compared. Integrated kitchen ventilation systems such as the displacement ventilation recommended in Europe/VDI are also described. Some case studies conducted by the authors with CFD simulations and model experiments are discussed.
