Summary

The effects of physical damage, chilling injury, heat shock and controlled atmosphere on tomato fruit were compared to changes occurring during normal ripening and senescence. Relative to controls, physical damage and chilling injury fruit displayed increased ion leakage and a decreased rate of red colour development, increased ATPase activity and saturation index. Membrane-associated polygalacturonase isozyme II appeared sooner in physical damage fruit, but its appearance was delayed in controlled atmosphere and chilling injury fruit, relative to controls. Tomatoes exposed to heat shock and controlled atmosphere treatments, however, displayed ripening and senescence physiological symptoms similar to control fruit.
