Summary
Quality deterioration was estimated in mangoes, guavas, bananas, apples, potatoes, sweet potatoes, soyabeans, peas, aubergines, green chillies, carrots, tomatoes, onions and radishes stored at 5 deg C for 7 days using 1,3-diethyl-2-thiobarbituric acid (DETBA)-malondialdehyde. It was concluded that the DETBA method is suitable for estimating quality deterioration during storage.
