Summary

Hazard analysis is essential for preventing food poisoning. Using Salmonella as an example, the author proposes a methodology based on three aspects: the product, the Salmonella count and the reactions of the victim. The following points are discussed: identifying danger, the microbial ecology of the products, and the causes of modified growth of pathogenic micro-organisms in food.
