Summary

In the second part of this article (see also this Bulletin, reference 2007-0268), the authors focused on European legislation and that of the United States Food and Drug Administration (FDA) relative to fish products' safety. The American system is primarily based on scientific data, on the legislation of each state and the legal responsibility of each industry to produce safe food products. Whereas the European system aims at the creation of a single hygiene-control method, that is currently available through five directives for the control of food products in all sectors. It is a veritable quality control mechanism throughout the whole production chain. Thanks to this mechanism, the main responsibility for food safety will lie with the producers.
