Summary

The French sea food market is developing, especially for fresh products. Fresh fish sales, which had dropped between 1989 and 1992, have been steadily growing again since 1993. Quick frozen products had a reversed fate - sales boomed until 1993 (25% increase over six years') and have decreased by 6% since then. Sales of aquaculture products have increased, especially in supermarkets. Progress has been made, too, in preservation and in making cooking easier. The trade deficit in seafood products widened again by 10% over 1994. Supermarkets are experiencing ongoing growth thanks to the evergrowing impact of distributor brands. Shrimp, which tops international fish and shellfish trade, accounts for 80% of French seafood imports.
