Summary

Mathematical models, covering a wide range of heat transfer situations which arise in food industries, are presented. By using finite integral transforms, generalized special functions and a new function, proposed by the author, an inhomogeneous boundary value problem of heat conduction is solved. Hypothesis and calculation tools for a good simulation are described. The obtained unified solutions can be used both: for prediction of the thermal processes in the cold chain elements (food cooling or heating, storage, transport, distribution, etc.) and for analytical reference for numerical model verification in rather complicated heat transfer regimes.
