Influence of air flow properties during chilling and chilled storage of foodstuffs.

Summary

The effects of air flow velocity and turbulence intensity on the surface and core temperature profiles of two products: a cylinder and a pork carcass hindquarter are calculated. The model used describes the heat transfers inside the product while taking into account the exchanges by radiation and evaporation at the body surface. The values of the convective transfer coefficients have been determined experimentally at the laboratory for different air flow velocities and turbulence intensities. Results are given.
