PRAWNS (NEPHROPS NORVEGICUS) CAUGHT OFF NORTHERN IRELAND ARE SOLD FROZEN, AND THE MARKET FOR THEM IS THEREFORE LIMITED. THE AUTHORS TREATED PRAWNS WITH ACETIC ACID AND THEN PACKAGED THEM IN CO2 AND N2 ATMOSPHERES. DIPPING THE PRAWNS FOR 4 MINUTES IN AN ACID SOLUTION AND PACKAGING THEM IN AN ATMOSPHERE OF 50% CO2 AND 50% N2 GAVE A 12-DAY SHELF LIFE AND NO MICROBIOLOGICAL PROBLEMS.
