Summary

THE PURPOSE OF THE RESEARCH IS BENEFITING FROM THE HIGH QUALITY OF THE CONCENTRATES OBTAINED BY FREEZE-DRYING, WHILE SAVING COST BY PREVIOUS FREEZE-CONCENTRATION. THE AUTHORS MAINLY STUDY THE EFFECT OF THE RATE OF THE CONCENTRATION AND OF THE TEMPERATURE OF HEATING PLATES DURING SUBLIMATION ON THE FINAL QUALITY ESTIMATED AFTER THE RETENTION OF ANTHOCYANS, L-ASCORBIC ACID AND TOTAL ASCORBIC AND DEHYDROASCORBIC ACIDS IN THE DRY CONCENTRATE. THE STUDY CONCLUDES WITH THE FEASIBILITY OF THE MIXED PROCESS, WITHOUT CHANGE IN COLOUR OR IN VITAMIN C CONTENT, THE RETENTION OF THE SELECTED CRITERIA DEPENDING ONLY ON FREEZE-DRYING TEMPERATURE.
