Summary
Forced convection cooling of products packed or not, and stored in pallets, leads to heterogeneous results. During this study, the authors simulated the rate and heat transfer fields in different situations, using the macroporous medium approach. A flow model in relation to a fruit stack was established and validated using few easily determined parameters.
