Summary

The aim of this study was to examine cooling and storage profiles, changes in the texture of blocks of foie gras and to refine the results already obtained in a study on white spots already performed by CTCPA. All manufacturers should be able to select the optimal cooling/storage profile in order to achieve the best possible texture with respect to the organoleptic properties of the target product.
