Summary

On the basis of an analysis of the delivery logistics chain and of factors influencing operation efficiency, the significance of food transportation was studied with regards to quality maintenance. The authors underline the need to comply with ATP recommendations on the transport of chilled and frozen food. Storage and containerised transport conditions and the possibility of using modified atmosphere were also discussed.
