Summary

GOLDEN DELICIOUS, RED DELICIOUS AND AIVANIA APPLES AND CURE PEARS WERE FREEZE-DRIED, PACKED UNDER VACUUM OR IN NITROGEN AND STORED FOR ONE YEAR. NO ESSENTIAL CHANGES IN AMINO ACIDS WERE FOUND IN THE FREEZE-DRIED AND STORED FRUITS. THE TWO PACKING MEDIA WERE FOUND ADEQUATE IN TERMS OF FREE AMINO ACID RETENTION.
