FREEZE-DRYING OF L.ACIDOPHILUS DESTABILIZED THE H-BONDS INVOLVED IN BINDING OF SURFACE LAYER PROTEIN TO THE CELL WALL RESULTING IN ITS LOSS FROM THE SURFACE. GLYCEROL, BUT NOT CARBOXYMETHYL CELLULOSE, PROTECTED THE BONDS AND PREVENTED THE LOSS OF THIS LAYER.
