THE AUTHOR SURVEYS THE FREEZING OF WATER IN BIOLOGICAL SYSTEMS AND CONVENTIONAL FREEZE-DRYING UNDER VACUUM AND REPORTS A NEW PROCESS: FREEZE-DRYING UNDER THE ATMOSPHERIC PRESSURE IN A FLUIDIZED BED OF ADSORBENTS. THE EQUIPMENT IS DESCRIBED AND A COMPARISON IS MADE WITH THE CONVENTIONAL PROCESS FOLLOWING THE RESULTS OBTAINED FOR DIFFERENT FOODSTUFFS: BOTH PROCESSES APPEAR TO RESULT IN SIMILAR PRODUCT QUALITIES.
